Peanut butter and jelly overnight oats recipe - clean eating, vegan and healthy make ahead breakfast that is a total comfort food. It's very satisfying and yummy.

Peanut butter and jelly overnight oats is what happens when you really want peanut butter and jelly sandwich, but you rarely eat bread. So you create peanut butter and jelly overnight oats.

It’s about being creative to eat food you really like 🙂

This is a make-ahead breakfast with that pb&j mentality of total comfort food.

And it’s so easy to make, no fuss, just few ingredients, few minutes to prepare in the evening and you have yourself a yummy breakfast.

To make this breakfast totally clean eating make sure you buy natural peanut butter with no added sugar or oil. You want just nuts blended into peanut butter goodness and no extra ingredients in that jar.

Also there is the jelly to think of. Going for and actual sugar filled jelly was out of a question so I created my own quick version.

Take raspberries and dates, blend until nice and smooth and you have yourself a quick, healthy and very delicious jelly.

What’s left is mixing the ingredients and letting the overnight magic happen 🙂

Peanut butter and jelly overnight oats
Serves: 1 bowl
 
Ingredients
  • 60g of rolled oats (approx ½ cup) - buy gluten-free oats if you are gluten intolerant
  • 1 tablespoon of chia seeds
  • 1 teaspoon of vanilla extract
  • 1 cup / 250ml of milk (I used oat milk)
  • 1 tablespoon of natural peanut butter
  • Raspberry jam - see recipe below
Instructions
  1. Add all the ingredients to a bowl, plastic container or a jar. Mix well.
  2. Cover and leave in the fridge overnight.
  3. In the morning stir well and enjoy!
Notes
* Overnight oats will keep in the fridge for up to 3 days if you want to make them few days in advance.
* Make sure you buy natural peanut butter without added oil or sugar.


Raspberry jam
 
Ingredients
  • ¾ cup of raspberries (fresh or frozen)
  • 4 dates
Instructions
  1. Add all ingredients to a blender and blend until smooth.

    1. Steel cut oats will work in overnight oats and smoothies with slight modifications. For overnight oats use 1 part of steel cut oats to 2 parts of liquid and add fruit, nuts, seeds, etc as usual. Steel cut oats will not make creamy overnight oats. They will be more chewy and dense but still delicious. For smoothies I would recommend soaking steel cut oats overnight before adding them to the smoothie. They will be more easy to blend and eat this way. I hope that helps 🙂
