Going all green with mango, kiwi and spinach smoothie in the morning is very satisfying. It’s supposedly spring now but I don’t feel it yet. It’s very windy and rather dark still. Healthy banana bread

Making bread gives me immense satisfaction. Even when it’s banana bread and no kneading or proofing is involved. Still when you take this loaf out of the oven it’s like – I made bread! Very satisfactory. Especially when it’s well risen, and not slack-baked. Now, I think that is an impressive result. I feel like a seasoned baker even though I’m rubbish and can’t follow a recipe to save my life. Precise baking is not for me.

This is my go to omelette these days. It’s so satisfying. Taste buds are humming happily when you eat this combo. Creamy avocado, crunchy apple and gherkin. Sweet and tangy. And the omelette itself. Creamy egginess. The perfect bite would be with all of those 4 things on the fork. Grab a bit of avocado, follow with a slice of apple, a slice of gherkin and finish with omelette bite. Waffle iron is a totally magical appliance. You add more or less a pancake batter, you close the iron, wait impatiently for few minutes. You open the waffle iron and voila, you have a waffle! Crispy on the outside, fluffy on the inside. If you would take this batter and cook it in the pan you would have a pancake. But if you cook it in a waffle iron, magic happens and you have something truly unique.

But I forgot that I know these genius oats with apple until I stumbled upon overnight oats quite a few years later. And then I remembered I used to make them. Super easy granola

I will say this- there is nothing like homemade granola.

I always bought granola. I thought there is really no point in making your own if you can buy it, and it tastes good. Right? And it’s a hassle to make it. I really could not see any benefits of making your own. And then I quit processed sugar. I couldn’t really find granola that would suit my new dietary  requirement.

The yellow kicker smoothie is like a pudding breakfast. And with all the chia seeds and golden linseeds, it’s packed with fuel to keep you going. And turmeric is that extra little bit of kick you need.

It’s a busy smoothie, I have to say.

I like the intense color that turmeric have. It’s so incredibly rich yellow. Since turmeric dyes everything on the spot it’s so freaking strong, it is at most important to be careful when using it.

Blueberry and pumpkin seeds overnight oats

There is something about overnight oats that makes me think – comfort food. Even more, when blueberries and pumpkin seeds are involved. Maybe it’s the creaminess of oats or the little bits of goodness that you find in the oats – banana, pumpkin seeds, blueberries. Each spoonful is a happy spoonful. I’m not sure what it is, but overnight oats can put you in a good mood, which let’s face it, is a very positive aspect of a breakfast.
