Oat waffles with strawberry jam

Oat waffles with strawberry jam recipe - great power breakfast to give you energy for the day. Healthy strawberry jam with delicious and sweet oat waffles.

Oat waffles with strawberry jam is a great power breakfast. Waffles are dense and delicious. And the jam is super fresh and so flavorful. It’s a great breakfast combo.

Strawberry jam is really quick to make and there is no cooking involved. You can use the blender or just a fork and a bit of muscle to make this jam happen. It’s a great way to get that jam experience without having to spend the time to make it and without the extra sugar you don’t need. Sweet and fresh strawberries really shine in a jam form.


Oat waffles
Serves: 3 waffles
 
Ingredients
  • 1 large banana (approx 130g)
  • 2 eggs
  • 1 tablespoon of olive oil or melted coconut oil
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 1 cup of oat flour
  • 50 ml of milk (cow's, almond, rice, I used oat milk)
  • fresh strawberries and strawberry jam to serve (recipe below)
Instructions
  1. Preheat the waffle maker.
  2. Add the banana to the bowl. Mash it with a potato masher or a fork.
  3. Crack in the eggs, add olive oil, vanilla extract and baking powder. Whisk until smooth and frothy.
  4. Mix in the oat flour.
  5. Add the milk and stir again.
  6. Spoon approx 2 tablespoons per waffle to the waffle maker and cook the waffles until golden.
  7. Serve with jam and strawberries.


Strawberry jam
 
Ingredients
  • 1 cup of strawberries
  • 1 teaspoon of psyllium husk
Instructions
  1. Wash and add strawberries to the blender with the psyllium husk.
  2. Pulse until most of the strawberries are blended and there are some larger bits left.
  3. Jam will thicken a bit but if you feel it's too thin stir in a bit more psyllium husk.
  4. You can skip the blender and mash the strawberries with psyllium husk with a fork or potato masher.
