Oats with scrambled eggs – I realise the idea of combining these two ingredients sounds a bit bonkers. I mean oats and eggs. And this is not salty porridge recipe. These are scrambled eggs we are talking about. I know, it’s weird. But what can I say, the results are positively delicious.

I was kinda surprised how delicious these eggs are the first time I made them. I thought, I will give this a try, if it doesn’t work there is always porridge I can make for breakfast. You know – backup. and then the smell of egg oat mixture being cooked on coconut oil filled the kitchen making me hungry. and I tasted the eggs. And the porridge was positively not needed that morning.

This is definitely not one of those good for you but not so good tasting recipes. The one that supposedly should make you feel good because you are eating all the good stuff but really just leave you, well, disappointed to say the least. This one actually delivers on all fronts. These oat scrambled eggs are proper fuel to keep you going till lunch time and they are so good.  It’s good carbs and protein. And this recipe is easily done in five minutes.

For not a morning person – meaning me – this is a very positive feature. To speed things up, in the evening, I lay all I need to cook the scramble on the kitchen counter, so I don’t have to rummage through cupboards in the morning. Well, it’s probably more because I’m clumsy in the kitchen in the mornings before my coffee kicks in. Disaster like spilled milk, knocked over loud things tends to happen….  But either way, it helps to speed things along in the morning when every minute is precious.
Anyway, try these and you won’t be disappointed.

OAT SCRAMBLED EGGS
Serves: 1-2
 
Ingredients
  • 2 eggs
  • 3 tablespoons of oats
  • splash of milk (any will do - cows, almond, I used oat milk)
  • 1 teaspoon coconut oil
  • 1 teaspoon of toasted pumpkin seeds
  • salt and pepper
  • cucumber and greens of your choice (I used lambs lettuce)
Instructions
  1. Heat non-stick pan on medium heat and toast pumpkin seeds. When done set aside. Lower the heat to low-medium and add coconut oil.
  2. Crack eggs into a bowl, add oats, milk, good pinch of salt and pepper. Whisk until smooth. Pour the egg mixture into the pan. You should hear a nice sizzle. Don’t touch the eggs just yet, let the eggs brown slightly on the oil for up to a minute - these are the good bits. Than stir the eggs and cook for another minute or two stirring constantly until they are cooked through.
  3. Serve with cucumber slices and your favourite greens sprinkled with toasted pumpkin seeds.
Notes
Tip - Toast more pumpkin seeds and keep them as a snack, for sprinkling over avocado toast or other delicious things.
