I have to say I love eggs for breakfast.

On a sandwich, boiled, scrambled, with avocado. Eggs are such a great breakfast staple and I’m a really big fan.

When I started eating clean bought breakfast was not an option anymore. Which meant I needed to make my breakfasts at home, either to eat quickly then and there, or take to work with me.

Somehow eggs got pushed back to a weekend breakfast.

I mean you don’t need loads of time to make a scramble or to boil eggs but still you need more than 5 minutes.

And because of that, for me, it didn’t seem possible to have eggs and a quick breakfast at the same time.

But I like eggs for breakfast so I wanted to tackle this problem and find a solution.

How do I make a super quick breakfast with eggs?

I realised that boiled eggs can be a quick breakfast option if you don’t boil the eggs in the morning. Instead boil them the night before.

That idea changed my breakfasts forever.

Boiled eggs keep in the fridge for 3-4 days.  Which means you can boil your eggs the night before not just for the next day but for next few days.

Simple and genius.

Now I boil a batch of eggs and use them for next few days. It really makes a big difference in the morning.

IN THE EVENING

Boil 4 eggs to your liking. Cool them and store in the fridge.

On a dry pan toast 2 tablespoons of mixed sunflower and pumpkin seeds until golden.

DAY 1

This is a great portable breakfast!

Peel 2 eggs, slice in half and sprinkle with black pepper. Take a piece of cucumber, few radishes and cherry tomatoes. Wash, peel and chop the veggies.

Cut the avocado in half. Leave the skin on one half, sprinkle with lemon juice and store in the fridge for day 3. Scoop the other half out, sprinkle with lemon juice and toasted seeds.

Take some green leafs you like and place them on a plate or in the plastic container. Add all the veggies, eggs and avocado and dig in. Or take to work with you and dig in there 🙂

DAY 2

Toast your favourite bread or roll.

Peel 1 egg and cut into slices. Wash and slice one tomato.

Assemble your toast – add slices of tomato, sliced egg, sprinkle with sesame seeds and salt.

DAY 3

Peel 1 egg and slice it. Take the half of avocado from the fridge, scoop the flesh out and mash it with a bit of salt.

Take rice crackers, add mashed avocado, your favourite greens, sliced eggs and top with toasted seeds.

This simple plan makes 3 easy breakfasts for one person.
Ingredients
  • 4 eggs
  • 2 slices of toast or one roll
  • 2 slices of rice crackers
  • 2 tablespoons of sunflower and pumpkin seeds
  • ½ teaspoon of white and black sesame seeds
  • 10 cm piece of cucumber
  • 3-4 cherry tomatoes
  • 3-4 radishes
  • 1 tomato
  • 1 avocado
  • a handful of your favorite greens
  • juice of half a lemon
  • salt and pepper
Instructions
