Overnight apple oats
 
Ingredients
  • 60g oats (1/2 cup, 4 tablespoons)
  • 100 ml filtered water
  • 100 ml of milk (cow's, almond, I used oat milk)
  • 1 apple
  • 1 nectarine or peach
  • 2-3 dried apricots
  • approx 1 tablespoon of pumpkin seeds or any other seeds you like
Instructions
  1. Add oats, water and milk (or just milk if using milk only) to a jar or plastic container, stir well.
  2. Add grated apple, and stir well.
  3. Add chopped nectarine and dried apricots, stir well.
  4. Add pumpkin seeds.
  5. Close the jar/ container store in the fridge overnight.
  6. In the morning take the jar/ container from the fridge first thing so oats can come up to temperature before eating.
Notes
* Sub water for milk if you prefer a more rich taste of oats.
* This is a great portable breakfast. Take a spoon with you and you can have breakfast on the go.
* Try to find dried apricots without any preservatives. Naturally dried apricots are brown in color, bright orange dried apricots are treated with preservatives.
