Chickpea paste aka hummus

Chickpea paste aka hummus recipe - quick version of a hummus made by mashing the chickpeas with a fork for a more coarse texture. Great with flatbread.

Chickpea paste aka hummus is my version of a classic hummus. My version because I prefer mashed chickpeas instead of a blended version. I like a more textured paste where I control the level of mushiness so to speak ๐Ÿ™‚ If you prefer, just blend all the ingredients in a food processor ๐Ÿ™‚

Chickpea paste aka hummus
 
Ingredients
  • 1 can of chickpeas (400g can, 240g of chickpeas)
  • juice of half a lemon, approx 1½ tablespoons - possibly more to taste
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of tahini
  • a good pinch of salt
  • ½ teaspoon of ground cumin
  • ½ teaspoon of smoked paprika powder
  • 1 tablespoon of sesame seeds
Instructions
  1. Drain the chickpeas and add to a bowl.
  2. Mash with a fork or potato masher until you reach desired consistency (I partially mashed the chickpeas leaving a more coarse texture)
  3. Add a tablespoon of lemon juice to begin with, olive oil, tahini, a pinch of salt, cumin, smoked paprika and mix well.
  4. Taste and if needed adjust the seasoning by adding more lemon juice and salt.
  5. Add sesame seeds and stir them in.
  6. Serve with Buckwheat flour flatbread
Notes
If you prefer just blend all the ingredients apart from sesame seeds in a food processor. Add the sesame seeds at the end and stir them in.
