Carrot and peach smoothie

Carrot and peach smoothie recipe - quick, delicious and fresh breakfast smoothie made from raw carrots, peach, banana, mango, and flaxseed.

Carrots are a great smoothie ingredient. They are sweet as well as packed with fiber and vitamins. Adding carrots to your smoothie is a great way to up your veg intake in a sweet way 🙂 Carrot and peach smoothie is sweet, but not heavy sweet. It’s fresh because the carrots give that clean crunchy sweetness.

Carrots are a source of Vitamin A and K. Because those Vitamins are fat-soluble carrots should be eaten with a bit of fat so we are able to absorb those Vitamins. Flaxseed is a great source of Omega-3 fatty acid and will be able to assist in the Vitamin absorption.

Carrots might seem tricky to blend but my not high-speed blender have no problems with them. If you have doubts about your blender then blend the carrots first with part of the water until you get a carrot puree. Then add the remaining ingredients and blend again.

Carrot and peach smoothie
 
Ingredients
  • 2 medium carrots (approx ½ cup)
  • 1 peach
  • ½ mango
  • 1 small banana
  • 1 tablespoon of flaxseed (or golden linseed)
  • 250ml / 1 cup of filtered water
Instructions
  1. Wash the carrots. Chop them and add to the blender *
  2. Add peach, mango, banana, flaxseed and water to the blender.
  3. Blend until smooth **
Notes
* If the carrot skin looks ok I don't peel the carrots, bu it's up to you if you want to peel them.
** I don't have a high-speed blender and my blender did not have a problem with blending carrots until smooth. If you are not sure about your blender add carrots with part of the water first to the blender and blend until you get a carrot puree. Then add rest of the ingredients with remaining water and blend again.
