Blueberry coffee smoothie - oats, golden linseed, blueberries and banana blended with milk and coffee for a quick and healthy breakfast smoothie.

The whole idea behind the blueberry coffee smoothie was the combo of flavours. I though sweetness and flavour of blueberries will pair well with the earthiness of coffee. And I wasn’t wrong. The sweetness is followed by a hum of coffee. Blueberries and coffee complement each other very well and became best friends. And now I’m a big fan of them as well. This smoothie is perfect for any morning really, but especially when you need to be out of the door quickly and preferably you would like to have both your coffee and breakfast sorted out. And as it turned out this is achievable with blueberries and coffee smoothie. But the sneaky thing is this smoothie tastes more like dessert. A bit like coffee cake. I don’t think that’s a problem, though. Starting your day with something delicious and sweet is not a bad idea at all. Reaching for  an actual cake is definitely a bad idea. But this blueberry coffee smoothie is the best of both worlds – sweet and flavourful plus full of positive energy and goodness.

I have to say I definitely like my coffee in the morning. A big mug of black coffee to wake me up and get me moving. I used to love milk with my coffee, latte was my ultimate vice which I could drink one after another all day long. And then it turned out part of the health problem I kept having was milk. Imagine my horror when I realised I have to give up my milky coffee. Complete drama. It ultimately came down to a question which is more important to me – the whole coffee experience or my health. The choice was obvious but it was not easy to change the habit that was so linked to my comfort and routine. I never warmed up to soy or almond milk in my coffee. The taste wasn’t right. So I thought I’ll give this whole black coffee thing a go. It took some getting use to but now I’m fully converted. I don’t miss my lattes anymore and I don’t crave them. The surprise was when after few months of drinking black coffee I drank my once beloved latte. Instead of feeling rejuvenated and perked up I felt tired and sluggish. And my tummy wasn’t happy. I did not expect such a reaction. My body totally rejected the drink I had all day, every day for years. It only shows your body if needs be will cope with whatever you throw in there. It will cope because it has to but if it’s shown another healthier way it does not want to go back to old ways. Food for thought.

Back to blueberry coffee smoothie. I added oats and linseed to the smoothie to make it a complete breakfast. If you don’t have golden linseed sub it for brown flaxseed, it will work as well.

Blueberry coffee smoothie
 
Ingredients
  • 1 - 1.5 teaspoons of instant coffee of your choice
  • 2 tablespoons of oats
  • 1 tablespoon of golden linseed
  • 250 ml of milk (cows, oat, I used almond)
  • 1 banana
  • 1 cup of blueberries
Instructions
  1. Add coffee, oats, linseed and milk to blender. Blend until smooth.
  2. Add banana and blueberries.
  3. Blend until smooth.
Notes
* Golden linseed can be subbed with brown flaxseed.
* Smoothie will keep in the fridge overnight and can b enjoyed the next day or prepared in the evening.
