Apple and peanut butter porridge

Apple and peanut butter porridge - creamy, sweet and so satisfying. Comfort food in a form of quick and healthy breakfast. Perfect way to start your day.

Porridge. Such a classic breakfast. Peanut butter and apple. These two are made for each other. And banana. So good. And imagine all that in a bowl. together. Just perfect.

Even writing about this porridge makes me a little hungry.

Good porridge is good on its own. Creamy and velvety. But what goes with the porridge totally makes it. And peanut butter, apple, and banana combo was totally designed to be eaten with porridge.

Since I don’t like extra pans to wash I make my porridge in the microwave. It was a total revelation on the same level as discovering overnight oats. Microwaved porridge. Now it takes 5 minutes to make porridge in the morning. I mean hot meal in five minutes. Ok, maybe 10 minutes on the mornings when I have to think very hard where on earth did I put that bag of oats. But that just me. I tend to misplace things in the morning. And drop things. Usually, things that make a very loud sound when they hit the floor. Did I mention yet I’m not a morning person? That’s why I plan, make things ahead if possible and am very grateful for any improvements in the process of making my food.

A delicious bowl of porridge do make the morning a lot more manageable and actually makes me want to face the day. Magical porridge? But anyway. The microwave. Total time saver. And it means porridge can be made at work! Take what you need with you and just microwave the porridge there. I’m not only saying, I’ve done that.

This recipe makes a creamy not too thick porridge. If you like your porridge a bit more velvety add milk after  microwaving the porridge. No need to microwave again. Just add milk and mix well.

Apple and peanut butter porridge
Serves: 1

Ingredients
  • ½ cup of oats (rolled oats, Scottish porridge oats - approx 60g or 4 tablespoons)
  • 100 ml of filtered water
  • 200 ml of milk (cow's, almond, I used oat milk)
  • 1 banana
  • 1 apple
  • 1 teaspoon of peanut butter (or any other nut butter of your choice)
Instructions
  1. Add oats, water and 150 ml of milk to a bowl.
  2. Microwave for 2.5 - 3 minutes. Porridge will thicken and start to rise - that means it's done.
  3. While porridge is cooking peel and mash the banana with a fork. Wash, core and chop the apple into bite size pieces.
  4. When the porridge is done add remaining 50 ml of milk and stir.
  5. Add mashed banana.
  6. Add apple and peanut butter.
Notes
* If you like, use just milk instead of water and milk to make the porridge.
