Red berry smoothie

by Justyna

Red berry smoothie aka the lazy breakfast. Throw few things into blender lazy breakfast. The most difficult part is to peel the banana. That’s the level of difficulty we are dealing with here. I think that can be managed even on the most challenging morning.

The smoothie is fresh and not too sweet. Few dates can be added to amp the sweetness but for me, the slight sourness from the yogurt and berries in of this smoothie is one it benefits.

Apple and peanut butter porridge

by Justyna

Porridge. Such a classic breakfast. Peanut butter and apple. These two are made for each other. And banana. So good. And imagine all that in a bowl. together. Just perfect.

Even writing about this porridge makes me a little hungry.

Good porridge is good on its own. Creamy and velvety. But what goes with the porridge totally makes it. And peanut butter, apple, and banana combo was totally designed to be eaten with porridge.

Sunflower seed spread

by Justyna

I must say this sunflower seed spread took me by surprise when I first made it. I wasn’t sure what to expect. Will it be more like hummus? Or like mashed beans. Honestly, I didn’t know. And the taste is nothing like these two. It’s something completely else.

What would you want from a spread? I would want a great texture that’s not mushy. Taste that can stand on its own and will pair nicely with bread for example.

BLT pancakes

by Justyna

Here is a question. What do you do when you have leftover bacon from lazy Sunday breakfast? I know, I know, how come I had leftover bacon in the first place. I’m not sure how that happened myself, I think it might be that I made waffles as well and usual love for everything bacon had to fight with the everlasting love for waffles. It was one of those mornings when I felt totally inspired to cook,

Savoury oat pancakes

by Justyna

I have to say these oat pancakes are equally delicious as sweet breakfast and as savoury one. Here is the sweet version of these pancakes.

I wanted to make these pancakes for breakfast but didn’t feel like going for the sweet option. And savoury breakfast for me usually means eggs. In any form. I love eggs for breakfast. So pancakes and sunny side up egg seemed like a logical choice. And a delicious one as it turned out.

Oat scrambled eggs

Oats with scrambled eggs – I realise the idea of combining these two ingredients sounds a bit bonkers. I mean oats and eggs. And this is not salty porridge recipe. These are scrambled eggs we are talking about. I know, it’s weird. But what can I say, the results are positively delicious.

I was kinda surprised how delicious these eggs are the first time I made them.
